You take the pistachios,

add really nice flavor profile,

charred tomatoes, that great flavor.

The thing that's missing for me is seasoning.

In choosing burrata,

maybe you should spent your money on mozzarella

and then some Parmesan,

because it really needs that.

To me, it's totally missing that.

With $20, I decided to go with a vegetarian bolognese

made with smoked eggplant and duck-cell chopped

mini mushrooms and red sauce over a spaghetti squash

that's lightly tossed in olive oil and butter.

Oh my goodness.

Is that gonna be okay?

Chef Cory, texture of the bolognese is remarkable.

I think that the smartest thing you did

was to put that eggplant in there

because it gives it this sort of silkiness

and robustness.
